INGREDIENTS
1 cup pineapple juice (chilled)1 cup fresh lemon juice¾ cup Rose's passion fruit cordial¾ cup chilled water/ or soda water/ or Sprite1 cup crushed ice + more½ cup passion fruit pulpMint leaves.
METHOD
1. Spoon some crushed iced into glasses with a little passion fruit pulp.2. Mix pineapple juice, lemon juice, Rose's passion fruit cordial, half of the passion fruit pulp and chilled water/ or soda water/ or Sprite. 3. Pour onto crushed ice. 4. Top with more pulp.5. Take a sprig of mint, and hit it against your hand. This releases the oils of the mint. 6. Place into drink & serve.7. If making individual servings with a cocktail shaker, just quarter all the amounts. 8. Place some crushed ice into shaker, along with water, juices and cordial and shake to combine & chill. Strain over crushed ice & pulp. 9. If wanting to use soda water or Sprite, do not add to shaker, mix juices, cordial and a little pulp. Shake well with crushed ice.10. Strain into glass onto ice & top with soda water/ or Sprite. Stir in before drinking.
