4 extra large eggs1 cup castor sugar½ cup oil2 teaspoon vanilla essence½ cup warm water2 tablespoon cocoa powder1 cup cake flour2 ½ teaspoon baking powder Filling-250ml fresh cream4 tablespoon icing sugar½ teaspoon vanilla essence Topping-1 slab Aero dark chocolate1 teaspoon oil/coconut oil1 small tin Nestle dessert cream1 Cadbury Flake chocolate
1. Preheat oven to 180°C.2. Grease & line 2x 18cm round pans.3. In a deep mixing dish, beat eggs and sugar till pale & fluffy.4. Beat in oil & vanilla.5. Mix water & cocoa powder till dissolved. Leave aside.6. In a wide dish, sift flour and baking powder.7. Now add flour and cocoa liquid to batter alternatively, and beat together for smooth batter, till just mixed.8. Bake until risen and skewer inserted in center removes clean. (Time will vary if dividing into 2-3 separate layers, or if baking into one big cake and then slicing into layers.)9. Allow to cool. Remove from pan.10. Whip cream with icing sugar and vanilla till stiff.11. Sandwich cake layers with whipped cream, ending with a layer of cream on top.12. Place in fridge to set.13. Then melt chocolate, and fold into dessert cream.14. Pour ganache over cake and allow to settle.15. Then crush over Flake. Leave in refrigerator till needed.
