INGREDIENTS
6 Eggs3 cups Castor sugar1&Β½ cups hot WaterΒΎ cup Milk1&Β½ teaspoon Coffee, diluted 1&Β½ cups Oil3 cups Flour 6 teaspoon Baking powder 8 teaspoon Cocoa
METHOD
Beat the eggs for 15 minutes(the more it's beaten the softer it becomes).Add in the sugar and mix.Pour in the oil, water, coffee and milk.Beat again.Sift the flour, baking powder and cocoa into a dish. Fold the flour mixture into the egg mixture with a spatula making sure there's no air bubbles. Pour out into a baking tray lined with parchment paper. Bake on 180 degrees till done. Remove from the oven and leave to cool.Once cooled, turn it out on to a cooling rack and leave until completely cooled. Make a chocolate icing. Cut the cake into half, spread a thin layer of icing over one half, place the other half over and cut into equal pieces. Make a chocolate ganache (chocolate and fresh cream) and pour over. Decorate as desired.
