Soft Sponge Cake2 cup flour2 tablespoon cornstarch1½ cup sugar3 teaspoon baking powderPinch of salt6 egg yolks ⅔ cup oil 1 cup water1 tablespoon lemon juice1 teaspoon vanilla6 egg whites½ teaspoon cream of tartar Red Syrup ❤1 cup apricot jam1 cup water7-8 drops red food color Cocoa syrup 🖤3 tablespoon cocoa 2 cups icing sugar2 tablespoon butter1 cup water
Cake:🍰Beat the egg yolks until light and fluffy, add the oil and beat then add the water and beat again. Add the lemon juice. Gradually add in the sugar, then mix in the cornstarch and vanilla and again gradually mix in the flour. In a separate bowl, beat the egg whites with the cream of tartar until it forms stiff peaks Fold the first egg mixture into the egg whites('fold in' would mean you lift some of the batter with a flat spatula, and gently place it in an adjoining place, repeatingly. Folding is a very gentle way of mixing additional ingredients into a batter without allowing entrapped air to escape ) Pour into a lined baking panBake at 180°for 20 minutes or until a tester comes out clean I'm making really mini (or cereal) lamingtons so I cut the cake into 2 cm squares (slice it into the the size you desire) For the Red Syrup: ❤Add all the ingredients into a saucepan let it boil until its slightly thick Then allow it to cool abit until it's warm Dip your cakes in the syrup and toss in desicated coconut, yum! For the Cocoa Syrup: 🖤Add all the ingredients into a saucepan let it boil for 5-7 minutesDip your cakes and toss into desicated coconut
