INGREDIENTS
Green layer-Flesh of 2 large ripe avocados¼ cup milk2-4 tablespoon honey½ teaspoon vanilla essence1-2 drops green coloring (optional)¼ teaspoon gelatine powder + 2 tablespoon warm milk
Chocolate layer-½ slab of 100g Lindt 70% cocoa dark chocolate (melted)1 teaspoon cocoa powder
Coffee layer-1 teaspoon instant coffee powder
METHOD
1. Bloom gelatine in warm milk. Leave aside.2. In the meantime, blend avocados with milk, honey and vanilla till smooth. 3. Remove half of the avocado mixture and leave aside. (Add in colouring in the half if you wish for it to be greener for green layer).4. For the chocolate layer, melt the dark chocolate with a drizzle of oil in the microwave, in small intervals, till properly melted.5. Mix dark chocolate and cocoa into the blended avocado.6. Spoon chocolate avo mousse into mini serving glasses/ bowls as the bottom layer.7. Next, from the reserved blended avocado, remove 4 tablespoon. Mix coffee powder with the 4 tablespoon of blended avocado and leave aside.8. To the remainder of blended avocado, add in the bloomed gelatine and mix in well.9. Now spoon this mixture over the chocolate layer and leave to set in fridge for few minutes.10. Then gently spoon on a very thin layer of the coffee mixture over.11. Leave to set in refrigerator. 12. Serve chilled.
