5 ounces oil2 ½ ounces tomato ketchup 750g carrots1 cup sliced gherkins (lengthways)1 ¼ ounce atchaar masala1 ½ tblspns chopped garlic1 ¼ ounces (preservative water from the gherkin bottle)
1.) Peel, wash, cut carrots into batons and keep aside.2.) Add the garlic into a mixing bowl.3.) Then the atchaar masala, oil, tomato ketchup and mix everything together.4.) Add the carrots to this and mix again.5.) Then add the sliced gherkins and the gherkin water - mix again and it’s done.6.) Leave aside for approx an hour before serving.7.) This atchaar will stay in the fridge for upto 1 month.
