INGREDIENTS
1 medium onion2 green chilli or red cayenne chilli1 teaspoon chopped garlic1 can of tomato and onion mix or use4 medium tomatos chopped. 5 thin spicy mutton sausages about 250g in weightFine saltSugardhania (coriander)/cilantroSunflower or canola oilShallots
METHOD
Grill sausages in the oven till cooked. Then slice to your desired length and set aside. Slice onions and fry in a little oil on medium heat. Partially slit the chilli and add to the oil. Add chopped garlic and sauteAdd one can of tomato and onion mixBraise and add a dash of sugarAdd fine salt to tastePlace the sliced sausages into your chutneyBraise till the chutney is your desired consistency. I usually keep mine slightly chunkyAdd corriander leaves and chopped shallots to garnishBon appetite!
INFO & TIPS
Fresh tomatos take longer to break down in the chutney compared to canned ones
To shorten cooking time, chop fresh tomatos finely
If blending tomatos then add a tablespoon of tomato paste to return the color as blended tomatos turn into a very light colour.
