Potato And Egg Breakfast Hash

INGREDIENTS
3 medium-large potatoes washed and peeled1 large onion chopped2 tablespoon extra virgin olive oil2 spring onions trimmed and finely chopped4 eggs¼ cup shredded cheesesalt and pepper to taste¼ teaspoon paprika
METHOD
1. Cut potatoes into small wedges.2. Boil potatoes till done (not too soft). 3. Heat olive oil in a large frying pan over medium heat. Add potatoes and chopped white onion. 4. Cook for 10-15 minutes, uncovered, and stirring constantly.When potatoes are crispy and golden brown, add spring onions, salt, and pepper. Stir through.5. With your spatula, make four wells in the potatoes and crack an egg into each one. Sprinkle shredded cheddar all around.6. Cook until the egg whites are set, or until your liking. You may need to cook the yolks in a griller/oven on grill setting7. When done, sprinkle eggs with a pinch of paprika seasoning. Serve immediately.Afiyet Olsun!
