INGREDIENTS
1 cauliflower broken into florets1 carrot chopped1 potato cubedHandful of peas
1 onion thinly sliced1 elachie,clove,and a small piece of cinnamon stickFew curry leaves2 teaspoon Jeeru (Cumin) seeds2 teaspoon soomph seeds1 small green chilli chopped1 clove of garlic and a small piece of fresh ginger finely chopped.
1 teaspoon mustard seeds1 small tomato grated
2 teaspoon chilli powder2 teaspoon dhania (coriander)-Jeeru (Cumin) powder2 teaspoon tumeric2 teaspoon garum masalaSalt to tastehalf a teaspoon of sugar
METHOD
Heat enough oil in a pan and add a teaspoon of butter.
Allow to heat,then add in the mustard seeds. Add in the cinnamon stick,elachie and curry leaves. Using a pestle and a mortar crush,the Jeeru (Cumin) seeds,soopmh seeds and green chilli.
Add this to the hot oil. Cook for a few seconds,then add in the sliced onion,followed by the fresh garlic and ginger. Allow to soften and brown,taking care not to burn it.
Par cook the cauliflower,potato, carrot,and peas, add to the onion mixture. Add the chilli powder,tumeric,salt and dhania (coriander) Jeeru (Cumin) powder. Add only a little hot water and allow to cook on medium flame for 5 minutes,then add in the tomato and sugar,garum masala and mix well.
Cook until vegetables are tender. Add only enough water as is necessary to allow even cooking.
INFO & TIPS
Par cook vegetables in a little water if desired.
