125g soft butter1 cup packed icing sugar 2 teaspoon oil 2 xl eggs ½ teaspoon vanilla essence 1 ½ teaspoon baking powder 1 ¼ cup desicated coconut ½ cup corn flour +- 2 cups flour
METHOD
Beat butter and sugar till light and pale.Add oil, vanilla essence and beat in egg one at a time.Add in coconut, baking powder and corn flour. Make soft dough using flour. Roll out dough, make markings with fork and cut using cutter. Bake at preheated 170c oven for 15 minutes
