Couscous Salad

INGREDIENTS
1 cup couscous1 ¼ cups boiling hot water¼ teaspoon salt2-3 tablespoon Robertson's veggie seasoning1 small English cucumber diced½ cup pomegranate arils2 medium carrots (peeled & julienned)Pine nutsWalnutsBeetroot (optional)Feta (crumbled)Chopped parsley
METHOD
1. Boil water.2. In a heat proof dish with a lid, place in couscous, salt and seasoning. 3. Add water, mix and close to allow to swell and steam.4. Mix all other ingredients to couscous and fluff up with a fork. 5. Serve as is or refrigerate and serve cold.
INFO & TIPS
Note: May even serve with a yoghurt tahini dressing.
