INGREDIENTS
2 cups Basmati Rice 2 cinnamon sticks 3 bruised Elachi (cardomom) pods
Boil the rice untill its half way cooked drain,rinse and set aside.1 kg medium to large prawns2 tablespoon @Sujee exotic prawn and fish masala(you can use any fish masala)Juice of half a lemon2 onions finely sliced and fried untill its light brown2 tablespoons fine cuminSalt to taste1 teaspoon coarse red chillies½ teaspoon turmeric 1 large tomatoe liquidised 1 bunch fresh coriander liquidised½ cup sourmilk2 sticks cinnamon2 Elachi (cardomom) pods Few peppercorns3 cloves2 whole green chillies2 tablespoon ghee (Clarified butter)
METHOD
Fry 2 teaspoon slivered garlic in a teaspoon of ghee (Clarified butter) add in one teaspoon of whole cumin and fry untill the garlic turns pink.Liquidised the tomatoe and the coriander together Marinade the prawns in all the above spice.Leave for 15 minutes to marinade Line the bottom of your pot with foil.Pour some ghee (Clarified butter) onto the foilPut a thin layer of rice at the bottom of the pot.Layer the prawns .Keep a little of the masala aside and mix a handfull of rice into the masalaAdd this on top of the prawns Layer the rest of the rice on-top and sprinkle the fried onions on top.Sprinkle the saffron strands on top.Sprinkle half a cup of water over.Cover the pot and steam for 20 minutes on low.Check to see if rice is cooked.If not add a little more water and steam for another 10 minutes
