1 tablespoon butter1 cup polenta3 cups milk½ teaspoon salt1 teaspoon garlic salt1 teaspoon lemon pepper1 cup fresh cream½ cup grated mozzarella cheeseParmesan cheese (garnish)
Note:If you would prefer to use just milk and no cream, that is ok too. Or you may use water instead of milk.Best to make polenta fresh so that it remains creamy. As it sits, it dries out, so if reheating, add in very little milk and reheat stirring together. Method:1. Heat butter in a pan on medium heat.2. Add 3 cups milk, with salt, garlic salt and lemon pepper.3. Then add polenta and mix in.4. Keep stirring till milk has reduced. 5. Now add in fresh cream and continue cooking, whilst stirring until cream has reduced, but do not dry out polenta.6. Remove from heat and add cheese.7. Place back on heat, switching stove off, and mixing in the cheese till fully melted in.8. Check seasoning.
