INGREDIENTS
2 cups washed sugar beans ½ teaspoon Methi (Fenugreek) seedsOil1 large onion1 teaspoon mustard seeds1 stem curry leaf2 chopped tomatoes 2 tablespoons chilli powder 1 teaspoon kashmiri masala ½ teaspoon turmeric powder 1 tablespoon roasted dhania (coriander) jeerah powder 3 potatoes cut in halvesSalt to tastedhania (coriander)4 tablespoons tamarind water
METHOD
Boil sugar beans and Methi (Fenugreek) seeds till soft and keep aside..dont discard off the water.Braise onion, mustard seeds and curry leaf in oil.Add in all masalas with tomatoes and allow to cook.Add in potatoes and cook till soft.Add in boiled sugar beans with 1 cup of the sugar beans water..allow to cook a further 15 minutes on medium heat.Pour in tamarind water, mix lightly and cook for a few minutes.Garnish with dhania (coriander)
