INGREDIENTS
1 kilo of lamb knuckles or shoulder chops1 tablespoon ginger garlic 4 tablespoons mixed masala2 tablespoons curry powder 4 large potatoes cut into quarters 2 chillies 2 cinnamon sticks 2 star anise 1 Teaspoon jeera seeds 1 Teaspoon Methi (Fenugreek) seeds ¼ Teaspoon ground cardamom powder 2 tomatoes diced Salt to taste 2 teaspoons sugarFresh danya
METHOD
In a deep pot, heat oil and add all the whole spices. Fry for 3 minutes, then add onions and fry until golden brown (add water if need be) add the garlic ginger, chillies and tomatoes and cook until soft. Now Add all the spices and then the meat (cut into chunks) Cook for 45 minutes on medium heat and add salt to your taste. Add the potatoes and cook until soft. Adjust salt and add sugar. Simmer over low heat so gravy can thicken up. Add fresh danya and serve hot with poppadums, white rice / flaky butter roti and kuchumer. Enjoy
