INGREDIENTS
Chicken pieces (washed and cut)Potato cut into cubesSunflower oil1 TB butter1 Onion finely chopped1 tomato grated1-2 whole Star anise1 TB Cumin seeds3 Cloves3 Green cardamom1-2 garlic cloves finely choppedThumb-piece of ginger finely choppedA good pinch of Saffron2TB tomato pasteFresh or dried mint leavesChilli powderTumericSaltdhania (coriander) powderJeeru (Cumin) powderGaram masalaPinch sugar (optional)Squeeze of lemon (optional)
METHOD
Heat sunflower oil,and butter,in a pot heat before adding cumin seeds,bay leaf,cloves and cardamom. Saute for a few seconds taking care it doesn't burn.
Add in the onion and cubed potatoes and fry until the onions are golden brown
Add finely chopped ginger and garlic and saute for 2 minutes
Add the grated tomato,tumeric and salt and fry for a few seconds.
Add chilli powder,dhania (coriander) Jeeru (Cumin) powder,tomato paste,add a little water,safron, mint,sugar,squeeze of lemon and give this a good stir,mix well.
Add in the chicken pieces and cook until the potato is soft and chicken is cooked.
Taste and adjust seasoning before adding the garum masala last.
Serve and enjoy!
INFO & TIPS
You may also add a whole cinnamon stick along with the other whole spices,but I omitted this as I didn't have it.
