RECIPE
2 chickens..Cut your chicken in quarters and wash and drain it well..Cut through the white meat to open it up and make deep slits across all the pieces..
Make your paste with the following..
2 tablespoon red ginger masala1 Heaped tablespoon tikka masala1 tablespoon fine red chillies 2 tablespoon oil2/3 cup plain yoghurtJuice of 1 lemonSalt to taste 1 teaspoon crushed jeeru (cumin)1 & ½ teaspoon fine dhania (coriander) Extra crushed chillies if you want it strongerA pinch of garum masala A few drops egg yellow coloringA few drops red food coloring
Rub this paste all over the chicken in the slits everywhere, using all the paste..Let this marinade for a few hours
Now if you're gonna braai (bbq) it on coals you have to braai (bbq) it on a higher level so it get a chance to get cooked in the centre or alternatively pack it in the oven dish on the grill (save the sauce for basting)pour water in the pan and first bake it on high for about 20 minutes then switch your oven to grill until it's cooked on the one side. Turn it around and baste with the rest of the sauce then grill till it's done..💛💚💙😘😘😘😘
Garlic Butter Naan by Monowara Mohamed Bhamjee
5 cups cake flour2 teaspoon baking powder1 packet instant dry yeast1 teaspoon salt2 & ½ tablespoon sugar6 tablespoon Cremora(milk powder)2 tablespoon oil2 & ½ tablespoon butter(melted)2 & ¼ cups lukewarm water
Sift the flour. Salt. Baking powder & Cremora Add the yeast and sugar and mix well.Add the melted butter & Oil to the water and mix it to the flour and knead to a nice soft dough..
Let it rise till doubled or for about 2 hours then knock it down..Make about 14 balls and roll it out like roti's. Leave it to rise 30 minutes then fry like roti's and brush with garlic butter ...
It's soft. Tasty and yummy in the tummy!!😉😘🤗
