INGREDIENTS
1kg large chicken fillet1 ½ cup fresh breadcrumbs¼ cup parmesan powder2 teaspoon dried Italian herbs1 teaspoon garlic powder1 teaspoon chilli powder½ teaspoon salt
Marinara Sauce-1 can crushed tomatoes1 tablespoon ground garlic1 large onion (sliced)2 tablespoon olive oil1⁄2 teaspoon fresh ground black pepper1⁄2 teaspoon salt1⁄2 teaspoon ground green chillies2 tablespoon chopped fresh basil (reserve a pinch)2 tablespoon chopped fresh Italian parsley (reserve a pinch)1 bay leaf1 small sachet tomato pastepinch of sugar
Also needed:Beaten eggCake flourPenne pastaMozzarella cheesePanko crumbs¼ cup parmesan powderDried oregano/ Italian herbs
METHOD
1. Wash chicken and pat dry.2. Cut chicken fillet into halves lengthwise or flatten out evenly.3. Add spices to flour and mix in.4. Dip chicken into flour.5. Then dip in beaten egg, then crumbs.6. Leave in fridge to firm then fry in shallow oil on medium heat until chicken is cooked through, golden and crispy on either side.7. For the sauce, in large pan over medium heat, saute onion in olive oil until translucent.8. Add garlic, and chillies, fry for half minute, then add tomato. Mix in salt, pepper and bay leaf.9. Let sauce simmer on low for about 20 minutes, stirring occassionally.10. Add basil and parsley and stir well.11. Allow sauce to simmer till thickened, stirring inbetween. Pull out bay leaf.12. Boil penne in water with little salt and oil. Boil till al-dente and drain. 13. Add pasta to cooked sauce. 14. Slice chicken and add to sauce.15. Spoon into a casserole dish, sprinkle over cheese.16. Toss panko with parmesan, dried oregano and sprinkle onto cheese.17. Place in heated oven and melt cheese and crisp panko.18. Remove from oven and garnish with chopped basil.
INFO & TIPS
a) You may add fresh cream to the sauce and simmer with the sauce, to make into a creamy tomato pasta sauce.
b) You may use a packet of All Gold tomato pasta sauce in place of tomatoes.
c) You may use store bought chicken schnitzels or strips as well, to cut down prep time.
d) Just use an electric coffee grinder to make panko crumbs if you cannot find any.
