INGREDIENTS
2 cups green moong dhall (lentils) 1 large onion3 tablespoon oil1 cup liquidised tinned tomato or passata1 ½ level teaspoon salt (please taste as yoghurt and vinegar is also add to the salty taste)1 ¼ teaspoon chilli powder¾ teaspoon arad (Turmeric) 1 teaspoon dhana Jeeru (Cumin) powder1 ¼ teaspoon crushed garlic¾ teaspoon crushed ginger5 tablespoons creamy greek yoghurt3 teaspoon brown malted vinegarChopped coriander
For garnishing/serving:Red chilli and chopped coriander Roti (Optional)Steak, chops or lollies (optional)
METHOD
1.) Wash mug and boil in salted water until it doubles in size and softens (keep adding a little boiled water at a time because the water gets soaked in the mug while boiling)2.) In a separate non-stick pot, add the onions and cook until golden brown, then add the tomato and spices - Mix well and cook on medium heat for approx 10-15 minutes until the oil comes to the top, add abt a ¼ cup of chopped coriander and mix again.3.) Add the boiled mug with the water that is left in it (approx ¾ - 1 cup of water should be left into the cooked tomato mixture and mix well.4.) Add the vinegar and yoghurt and boil again on medium heat for 5-7 minutes for all of the flavours to mix together.5.) Garnish with fresh red chilli, coriander and serve with roti, steak, chops or lollies on the side.
