Serves 12 place in a ( 2 1/2 inch muffin pan)
INGREDIENTS
3 cups raisen bran(Kelloggs brand) 1 ¼ cup all purpose flour 2 ½ teaspoon baking powder ½ cup sugar¼ cup dates chopped 1 handful almonds chopped Pinch salt⅓ cup shortening or vegetable oil1 egg 1 ¼ cup milk
METHOD
1. In a mixing bowl sift all dry ingredients set aside. 2. In another bowl add raisen brand and milk combine evenly and let it soften for just a few minutes followed by egg and shortening beating it well. 3.Add all dry ingredients to wet mixture followed by the dates and almond nuts. 4.Pour into greased muffin pan and bake in preheated oven 180 degrees for 25 minutes until golden brown and test with skewer should come out clean.
