INGREDIENTS
Step 1:1 chicken breast fillet¼ teaspoon crushed ginger½ teaspoon crushed garlic Salt to taste ¼ teaspoon light soya sauce
Step 2:1L boiling water mixed with 1 light teaspoon soya sauce, ½ garlic powder and ¼ ginger powder 1 teaspoon oil
Step 3:1 tin creamstyle sweetcorn2 tblspns cornflour2 egg whites (optional)
For Serving:2 spring onions chopped (optional)Coriander chopped (optional)Green chilli chopped (optional)Lemon wedges (optional)Buttered French Loaf or Tiger Loaf Bread
METHOD
Step 1:1.) Marinate the chicken with all of the step 1 ingredients, cover chicken fillet with water and simmer until cooked.Remove chicken, cool but keep water for step 2. Shred the chicken.
Step 2:1.) Heat oil in a non stick pot and add the shredded chicken and the leftover chicken water to this and bring to a boil.Then, combine all of the other step 2 ingredients , add It to the pot and bring to a boil again.
Step 3:1.) Add the creamstyle sweetcorn. Mix cornflour with small amount of water to form a thin paste. Pour into the soup, mix thoroughly so no lumps are formed.2.) Mix in 1 or 2 egg whites (optional) together with a dash of water, then drizzle it into the pot very slowly, mix well.
Garnish with all of the topping or toppings of your choice and serve with buttered bread
