This cake is slightly tangy moist and delicious & Simple to make.
Preheat oven 170° 3 large eggs1 teaspoon vanilla essence 130g sugar125ml oil Freshly squeeze lemon juice of one lemon125g natural yogurt 100g dessicated coconut1 teaspoon baking powder190g flour Glazing Icing sugar and lemon juice.
In a bowl whisk together the eggs, sugar and vanilla until double in volume.Then add oil, yogurt and lemon juice and mix.Combine the baking powder,dessicated coconut and flour . Mix well .Pour in greased baking tin . Bake for 40 to 45 minutes or until done.Cool.Combine enough icing sugar and lemon juice to make a thick mixture. Pour over the cake
