INGREDIENTS
For the sponge:200g flour3 tablespoon custard powder2 teaspoon baking powder2 teaspoon bicarbonate of soda4 eggs225g butter200g caster sugar2.5 tablespoon milk
For the buttercream:125g icing sugar4 teaspoon custard powder75g butter1.5 teaspoon boiling water
METHOD
1. Preheat oven to 180. Butter and lime 2 x 20cm sandwich tins (I used a tray)2. Put all the ingredients except the milk into a food processor. Process to smooth batter and then add the milk to make a soft dropping consistency. Divide between the cake tins and bake for 20mins or until done3. Once baked allow to cook for 5mins before turning out4. For the buttercream: process the icing sugar and custard powder to get rid of any lumps then add in the butter. Lastly add the boiling water until you reach desired consistency 5. Decorate as desired
INFO & TIPS
I would omit the bicarbonate of soda next time
