INGREDIENTS
250g butter2 cups semolina (or taystee wheat)2 cinnamon sticks3-4 green slightly bruised cardamom pods1 cup boiling water2 cups full cream milk1 teaspoon cardamom powder1 egg (optional)Good pinch saffron threadsYellow food colouring397g can condensed milk
Garnish-290g dessert creamChopped pistachios/ almonds/ cashews
METHOD
1. Mix the milk, saffron, cardamom powder, egg, condensed milk and food colouring together in a bowl.2. In a wide pot, toast the semolina on medium heat, till lightly golden.3. Add in butter, cinnamon sticks and cardamom pods. 4. Allow to incorporate and mix together.5. Then add in the cup of water. Quickly mix together to allow the semolina to swell. Then drop heat to low heat.6. Pour in the milk mixture and mix in well.7. Cover and drop the heat and allow to cook on low heat.8. Mix now and then so it does not scorch at the bottom.9. Once all the liquid has evapourated and the soji (semolina) has fluffed up, remove from the heat.10. Before serving garnish with cream and nuts.#whenruhanacooks#mamataughtmewellrecipes
