INGREDIENTS
2 cups rice
1 carrot cut in to small cubes
½ red pepper chopped
½ green pepper chopped
½ yellow pepper chopped
Oil for cooking
Salt to taste (if you added salt when boiling the rice don't add more salt)
½ teaspoon crushed black pepper
2 teaspoon lemon pepper
Spring onions for garnish
METHOD
Wash and soak the rice for 30 minutes then par boil it (like you would for biryani) strain in a colander and set aside.
Heat oil in a wok add the carrots with tri colour peppers, let it cook fir a minute or two add in the spices braise for few seconds then add the par boiled rice adjust any taste mix it well gently making sure not to break the rice, cover the wok and steam it on low heat for 30 minutes or until steamed (ypu will know its done when you open the lid & you see lots of steams coming out). Garnish with spring onions/ coriander. Serve hot with saucy chicken strips.
