INGREDIENTS
150g plain flour½ teaspoon salt¼ teaspoon bicarbonate of soda½ teaspoon baking powder110g/4oz soft butter85g/3oz soft light brown sugar1 teaspoon vanilla essence1 egg170g chocolate chipsLotus biscoff spread
METHOD
1.) Preheat the oven to 180 degrees.2.) Measure the flour, salt and bicarbonate of soda and baking powder into a bowl - mix and keep aside.3.) With an electric mixer (or by hand) beat the butter and sugar until It’s light light and creamy then add the vanilla essence and the egg and beat again.4.) Fold in the flour mixture, then, once it’s all mixed in, fold in the chocolate chips.Divide the dough into golf sized balls.Flatten each ball and place a teaspoon of biscoff spread in the middle, enclose and roll into a ball again. Continue with the rest of the dough. 5.) Bake For 7-9 minutes. 6.) Remove it from the oven and leave it aside (as it cools the outside will get a bit crispy but the inside will stay soft and gooey). 7.) Serve warm and soft with ice cream or wait for it to cool and serve with milk/tea/coffee/hot chocolate.
