INGREDIENTS
2 medium sized bringal4 normal sized onions (take 2 if they huge in size)Whole jeeru (cumin)2-3 green chillies chopped¾ cup chopped spring onion½ cup chopped fresh green garlicSalt according to taste2 teaspoon haldi1 teaspoon dhana jeeru (cumin)1 teaspoon white pepper1 cup sour milk/yogurt
METHOD
1.Apply oil to the bringals and roast it on the stove till its soft and shrinks 2. Peel off the outer layer of the bringal and wash nicely 3. Braise your onions(do not brown the onions completely) with chillies and jeeru (cumin)4. Once half way braised add in the spring onion and fresh garlic (if theres no fresh garlic add in ½ teaspoon of crushed garlic, and add same amount of extra spring onion) and let it braise5. Add in the spices and let it braise6. Add in your bringals and soften it out with spoon and let it cook on low and then on steam.7. Lastly once cooked add in yogurt
INFO & TIPS
For a better smokey flavour, burn coal and place it in the pot with a foil under and put little bit ghee on the coal for smoke and cover the lid for 5 mins
