INGREDIENTS
2 chicken fillets sliced into thin strips1 package ramen ( 2 minute noodles)2 tablespoons peanut butter2 tablespoon Sriracha sauce 2 tablespoons chopped fresh springonions A handfull of baby spinach 1 small sliced red onion1 tablespoon crushed garlic1 teaspoon chilli garlic pasteGrinded black pepper1 tablespoon soy sauceUnsalted Cashew nuts you can use peanuts if you prefer.Peanut oil
METHOD
Make a marinade with the peanut butter,sriracha sauce,crushed garlic,soy sauce,black pepper,chilli garlic paste.Marinade the chicken in the above ingredients and leave aside.Soak Noodles in boiling water untill soft,make sure it doesn’t get totally soft,drain and set aside.Heat the peanut oil,fry the cashews untill they light brown,remove and set aside.Add the chopped spring onions,red sliced onions,sliced baby spinach.Remove and set asideAdd a little more peanut oil into the pan Add the marinaded chicken and some water about 1 cup.Cook untill the chicken is done check if you need more water to make the sauce a little thin.Add the Stirfry veggies and cashew nuts.Lastly add in the drained noodles and toss well.Garnish with chopped spring onions and serve immediately.
INFO & TIPS
You can adjust salt and chillie to your taste.I did not add salt because the soya sauce is salty.
