INGREDIENTS
½ kilo chicken fillet cut into strips1 tablespoon red chilli garlic paste 1 teaspoon zeal(chinese salt)1 teaspoon grinded black pepper2 tablespoon soya sauceMarinade the chicken in all the above ingredients.Leave aside for 15 minutes
1 egg¼ cup maziena (corn flour)½ cup cake flourAdd the egg and cake flour and maziena(cornflour) to the chicken Mix well to coat the chickenFry the chicken in medium hot oil for plus minus 5 to ten minutes.Remove and set aside
½ cup cashew nuts¼ cup sesame oil (or sunflower oil)Fry the cashew nuts untill golden brown and set aside
I used the following vegetables Sliced mushroomsJulienned red and green peppersSliced and seeded jalapeño peppersShredded red cabbageCubed pineappleSliced red onionChopped fresh coriander
Sauce2 tablespoons shezwan sauce(l made my own recipe on my page)4 tablespoon soya sauce2 tablespoon sweet chilli sauce 2 tablespoons tomatoe sauce2 tablespoons viniger
METHOD
Mix all the sauces together in a bowlAdd more sesame oil in the wok Add in the sauce and stir fry the sauces ,add a little water, lower heat and stir fry the sauce a little if it sauce is too thick add a little water.Add in the vegetables and stir fry quickly do not overcook the vegtables.Add the fried chicken pieces toss wellToss well Add in the cashew nuts Do not cook further switch off the heat and serve immediately.Sprinkle chopped springonions and sesame seeds over the top before serving
