½ cup pumpkin grated (microwaved 2 minutes with 1 tablespoon brown sugar and ½ cup water OR boiled with sugar till just slightly soft) ½ cup brown sugar or white1 egg1 teaspoon vanilla essencePinch nutmegLittle ground cinnamon depending on taste2 teaspoon baking powder½ cup milk1 & ½ to 2 cups flour to make thick batterExtras: Golden syrup for drzzlingIcing sugar for dusting
- Boil or microwave the pumpkin till slightly soft, grate- Add the remaining ingredients and whisk/mix till combined into a thick batter- Put a little oil or spray and cook on a flat top griddle or non-stick frying pan or tawa - Heat up on low to medium heat - Using a big curry spoon or ladle pour batter on- Turn when slightly golden on one side, cook then remove- Drizzle on golden syrup and dust with icing sugar, can also sprinkle on more cinnamon- Enjoy :)
