INGREDIENTS
Kebaabs:½ kg beef/mutton/chicken mince1 Slices bread slightly wetted with water and ground up/squashed (can be omitted, but helps kebaabs stick together) or 1 egg if you prefer½ grated onion1 teaspoon jeera seedsSalt & ground black pepper to taste Fresh chopped mintFresh chopped dhanya1 tablespoon green masala1 Clove garlic grated1 tablespoon chillie powder1 tablespoon dhanya powder ½ teaspoon tumeric powder
Chutney:2 Tomatoes grated½ onion grated2 tablespoon oil1 ½ cups fresh cut green beans or frozenSome curry leavesFresh red chillie cut in half (if you use green chillie will blend with the green beans:) )Salt to taste 1 tablespoon chillie powder 1 tablespoon dhanya powder ½ teaspoon tumeric powder ¼ Cup water
Roti:4 Cups flourPinch salt¼ cup melted ghee (Clarified butter) or oilEnough hot boiling water to make dough1 cup more flour for dusting and rolling1 Cup more melted ghee (Clarified butter) or oil for frying on tawa
METHOD
Kebaab & Greenbeans:- Mix all the ingredients for the kebaabs together- Roll into meatballs - Set aside- In a pot add all the ingredients for the chutney- Add in the meatballs- Cook till all done- Add water just to make a thick chutney- Serve with homemade roti/bread/puri- Enjoy :)
Roti:- In a bowl using a wooden spoon or mixer, mix the ingredients together to form a smooth soft dough. When touched the dough should spring back.- Roll out dough, sprinkle on a little more flour and 2 tablespoon melted ghee (Clarified butter) or oil and roll into a long sausage - Break off/cut pieces of dough and roll into rounds in your hand (golf ball size dough makes smaller Rotis, bigger balls make larger rotis)- Cover dough with cloth so don't dry out- Sprinkle flour on board/table you will be rolling on- Using a rolling pin, role out the dough ball into a circular disk (sprinkle flour to prevent sticking as rolling)- On a heated tawa, place rolled disk, spread 1 tablespoon melted ghee (Clarified butter)/oil on, when dough bubbles, turn over (using a metal lifter/spatula to prevent burning uourself)- Spread on 1 tablespoon more of melted ghee (Clarified butter)/oil on this side - "Fry" the roti till lightly browned on both sides - Put into a foil in a container to keep warm and soft- Enjoy :) - Serve with anything of choice or as the little ones love, just add jam and roll up
INFO & TIPS
Kebaabs can be made and baked in oven or fried and served with sauces and purists, or add to roti as a kebaab roll, or add to fresh rolls and serve with chips.
