INGREDIENTS
-1 kg prawns (de-shelled, de-veined and washed)-Oil-1 medium onion (chopped)- a few curry leaves-½ cup passata or the equivalent in tinned or fresh tomatoes mixed with 1 tablespoon tomato puree-2 ½ teaspoon garlic paste-1 ¼ teaspoon salt-1 teaspoon chilli powder -¾ teaspoon arad (Turmeric)-¾ teaspoon jeeru (cumin) powder - ¼ small yellow pepper, ¼ small green pepper, ½ small red pepper (sliced) -A handful of chopped coriander -3 small potatoes (cut into large cubes)
METHOD
1.) Heat oil on medium heat, add the onions and curry leaves, cook until golden brown then add the tomato, garlic, spices and coriander. Cook until the oil comes to the top.2.) Add the prawns and continue to cook ok medium heat for approx 5-10 minutes.3.) Add the potatoes and continue to cook on medium heat until the prawns and potatoes are almost done, then add the sliced peppers and cook until everything is cooked through.4.) Serve as a side to khuri khitchri or with roti or puri.
INFO & TIPS
KOO tomato and onion mix can be used to make the chutney.
