3 cups plain flour¾ cup castor sugar2 teaspoon baking powder½ teaspoon baking soda¼ teaspoon salt¼ cup cocoa powder1 cup chocolate chips1 large egg, room temperature1 cup buttermilk½ cup oil1 teaspoon vanilla essence12 - 24 teaspoons Nutella
Preheat the oven to 200deg.Whisk together the flour, sugar, baking powder, baking soda, salt, cocoa powder, and chocolate chips. Set aside.Whisk together the egg, buttermilk, oil, and vanilla. Pour the wet ingredients into the dry ingredients, and mix until just combined. Do not over-mix.Divide the batter evenly between the 12 muffin cups. filling only half way. Spoon 1 - 2 teaspoons of Nutella into the centres, then pour the rest of the batter over the tops.Bake for 15 - 17 minutes, or until a toothpick inserted just off centre (to avoid Nutella) comes out clean. Allow to cool for 10 minutes in the pan, then transfer them to a wire rack to cool completely.(*Optional-pipe nutella on top)
