INGREDIENTS
¼ cup sifted flour. Set this aside to use when kneading dough.
4 and half cups sifted flour
¾ teaspoon fine salt
⅓ cup (80mls) sugar
4 Tablspns milk powder
1 Tablspn instant yeast
7 Tablspns melted butter
1 and ⅓ cup of warm milk
⅓ cup warm water
1 egg, at room temperature
METHOD
In a large bowl whisk together only 2 cups of your sifted flour with salt, sugar, milk powder and yeast.
In a seperate bowl whisk warm milk, warm water, melted butter and egg well. Add it to your dry ingredients and whisk till smooth.
Using a spatular slowly fold and mix in the remaining 2 and half cups of sifted flour. Once folded in well (remember to switch off your warmed oven) start kneading your dough by adding in the ¼ cup of flour that was kept aside.
Please DO NOT add in any more flour at this stage. Dough will feel wet and sticky but it will come together after 5 minutes of kneading by hand. It will start to pull away from the sides of the bowl. Make sure to keep kneading for a further 10 minutes. Dough will become softer and more elastic. It will be slighly sticky but easily pull away from your fingertips.
Now place dough in your greased bowl. Lightly spray the top of your dough with cooking spray or you may lightly rub some oil on top. Cling wrap bowl or cover with a lid and leave in your warm oven to rise for 1 and half hours.
Remove from oven and punch down dough. Shape as desired. Place in lightly greased trays lined with parchment paper (parchment paper is optional). Cover top with cling wrap. Allow to rise for a further 30 minutes in your oven or any warm place.
Remove tray from oven. Pre heat oven on 180 degrees 10 minutes before the end of rising time.
If you like you can brush dough with beaten room temperature egg and sprinkle poppy seeds or sesame seeds etc, before baking.
Bake for 15 to18 minutes. Once baked and rolls are hot brush tops with melted butter.
Enjoy.
Croissant shapes: After dough has risen then divide dough in 2's or 4's, roll out dough on a floured surface, brush with soft butter not melted butter cut in to 8 or 16 slices like for pizza, start rolling from the top in to a croissant shape. Place on greased tray. Allow to rise for 30 minutes and bake in a pre heated oven on 180 degrees for 20 minutes. Brush melted butter over as soon as its out of the oven. Remove from tin and cool on a wire rack.
You may use garlic butter instead and make garlic croissants. Or make it sweet by using nutella.
Cinnabons: After dough has risen, divide in half, roll out in a rectangle, spread over 4 tablespoon soft butter not melted butter, sprinkle over 2 Tbslpns cinnamon powder and sprinkle over ¼ cup or ⅓ cup of brown sugar. Roll up in to a swiss roll and cut in to even slices. Place on greased tray. Allow to rise for 30 minutes and bake in a pre heated oven on 180 degrees for 25 to 30 minutes. Drizzle icing of choice over hot buns.
Naans: Add 1 and half Tblspns fennel seeds to dry ingredients then follow mixing instructions above. After first rise shape in to buns or round naans place on greased tray and let it rise again for 30 minutes. Brush over room temperature beaten egg and sprinkle black poppy seeds. Bake in a pre heated oven on 180 degrees till done. Can brush top of naans with melted butter as soon as its baked. Remove from tin and cool on a wire rack.
Bread: Makes two loaves of bread. Divide dough in two after it rises. Gently pat out dough and then roll up to form a log that will fit in your loaf tin. Place in greased tin. Allow to rise for 30 minutes. Bake in a pre heated oven on 180 degrees for 25 to 30 minutes. Remove from tin and cool on a wire rack.
Garlic bread: Shape in to buns after it rises. Then allow to rise again for 30 minutes. Bake in a pre heated oven on 180 degrees. Brush garlic butter over as soon as its baked.
Also makes for great pizza bases. Make four extra large pizza bases.
INFO & TIPS
TIPS:
1. Switch oven on at 70 degrees. This ensures your oven is warm enough to place your dough in so it can rise. SWITCH OFF OVEN once you begin kneading your dough. Remember oven must just be warm not hot.
2. Spray cooking spray in a large bowl. Keep aside. Will use this to place dough in to rise.
