INGREDIENTS
½ cup castor sugar
2 tablespoons mazeina
3 egg yolks
¾ cup milk
½ cup cream
Vanilla bean
Lemon rind
1 sheet ready roll puff pastry
METHOD
In a pot combine the sugar, mazeina, egg yolks, cream,
Milk, vanilla pod cut in half and scraped out, a few lemon rinds
Mix together and bring to the boil over medium heat , move
aside and leave to cool.
Cut pastry in half and place on top Of each other then roll up
tightly from the long side and cut into 24 rounds then place into
greased 12 hole mini muffin pans. Spoon custard into shells
and bake at 200 deg for 12 minutes. Dust with icing sugar
