INGREDIENTS
For the chops:-8/10 pieces of spring lamb chops-¼ teaspoon ginger (coarsely chopped)-¼ teaspoon garlic (coarsely chopped)-½ teaspoon salt or to taste-1 teaspoon vinegar-1 teaspoon lemon juice-1 ½ tablespoons apricot jam-1 tablespoon oil-1 teaspoon butter-½ teaspoon Amina’s wonderspice steak and chops marinade-pinch of pepper
For the sauce:-3 teaspoon butter-5 level teaspoon lemon juice (bottled one) 2tsps if using fresh lemon-¼ cup single cream-pepper to taste-salt to taste-dried rosemary
For serving:Boiled riceLemon slices
METHOD
1.) Marinate chops with all of the ingredients atleast an hour (excluding the butter).2.) Melt butter in a pot on medium heat,add chops and a bit of hot water If needed - cook till tender. Remove chops from the pot.3.) In the same pot (with ginger/garlic pieces, dried out marinade etc will be left in), add butter and melt then add the salt,pepper and rosemary, lemon juice. Cook for a bit then add fresh cream, remove pan from the stove when the sauce has thickened. Serve with rice and lemon as pictured.
