2 chicken fillets cubed plus 1 pieces of chicken with bone 2 tablespoon canola oil 1 tablespoon ghee (Clarified butter) 1 small onion chopped into cubes 1 teaspoon red ginger garlic masala 1 teaspoon green masala 1 whole green chili1 cup oats 3 tablespoon lemon juice ½ cup mint finely chopped ½ to 1 cup fresh dhania (coriander) finely chopped(this is according to your preference)Salt Whole spices: 2 green Elachi (cardomom) pods1 cinnamon stick ½ teaspoon peppercorns Ground spices1 tablespoon Jeeru (Cumin) 1 tablespoon fine dhania (coriander) 1 tablespoon garum masala 1 teaspoon Methi (Fenugreek) masala ¼ teaspoon tumeric
Heat oil and ghee (Clarified butter) in a deep big pot. Add whole spices, chili and onions. Once onions start to soften add in chicken, ginger garlic and green masala. Cook for 3-4 minutes then add all ground spices. Mix well and cook for a further 5 minutes before adding in the water. Allow to cook for 10 minutes then add oats, lemon juice, mint and dhania (coriander). Cook for 20 minutes.
