Banana Loaf

INGREDIENTS

250 self-Raising flour2 eggs76g sugar 2 very ripe banana 125g margarine1 teaspoon. Bicarbonate soda ½teaspoon. Mixed spice

METHOD

Preheat the oven to 180c. Grease using cooking spray and line with parchment  paper. Cream margarine and sugar together till light and creamy. Add one egg at a time beating well after each addition. Soft the flour and mixed spice together. Mash the banana and add the bicarbonate soda to the mashed bananas. Add the banana mixture and cream mixture to the flour and mix well. Spoon into prepared loaf tins and bake for 50 - 60 minute
