I adapted slightly
RECIPE
2 to 3 very ripe bananas, peeled (about 1 &¼ to 1 & ½ cups mashed)⅓ cup melted butter, unsalted or salted1 teaspoon Bicarb of sodaPinch of salt¾ cup sugar 1 large egg, beaten OR+- ¼ CUP MAAS FOR EGGLESS1 teaspoon vanilla extract+- 1 & ½ cups Self raising or all-purpose flourOptional: Add crushed or Chopped Pecan nuts/Almonds /etcMethodPreheat the oven to 180 *and grease a loaf pan.(I used the Food processor) However u can Mash the ripe bananas until completely smooth. Stir the melted butter into the mashed bananas.Then Add in the sugarBeat well then add the beaten egg, and vanilla Mix in the flour gradually Pour the batter into your prepared loaf pan. Bake for+- 45- 50 minutes until a tester inserted into the center comes out clean.Remove from oven and let cool in the pan for a few minutes. Then remove the banana bread from the pan and let cool completely before serving. Slice and serve
INFO & TIPS
Add little milk to thin the batter a bit.
I enjoy smearing with Butter
