My Simple Style
Boil 2 Cups rice with 1 tablespoon salt halfway drain and keep aside Substitute Green chilli paste for Green chilli Mutton style Akni it should look lemony green
Heat and Fry in a Pot 4 tablespoon oil and 4 tablespoon ghee (Clarified butter)1 large Sliced OnionBraise Add 1 teaspoon whole Jeeru (Cumin) 2 small pieces of Taj 2 Elachi (cardomom) 4 whole peppercorns 2 Cloves2 slit Fresh Whole Green or Red Chilli (few curry leaves optional) Braise When aroma arises Add 500g (half kg) cut up Chunky Pieces of leg mutton1 tablespoon Ginger Garlic Paste 1 & ½ teaspoon saltCook till meat is well blended with the spices Now add little water to cook the meat let the water dry a bitNow add 2 tablespoon plain dble thick Yoghurt (Optional) 2 tablespoon Tomato puree2 Grated Tomatoes½ Cup Peas or Mixed Vegetable Few drop lemon juice (optional) +-1 & ½ tablespoon Kashmiri Chilli powder Or To Taste 1 teaspoon Crushed chilli (optional)1 Heaped tablespoon Spoon Dhana Jeera mix¾ teaspoon tumericLet it cook well with the meats and peas Cook on low heat till meats are almost done Now add 4 cut up in halves Potatoes -( I steamed the Potatoes half way in micro wave) Add all the drained rice Little chopped dhania (coriander) Mix well Adjust the Salt and ChilliAt this stage Add ¾ cup water For the rice to get well done Mix the rice well to the meats and cover the pot with foil place the pot in oven Bake at 180* for +-1&½ hour When almost done Make a wagaar By braising ghee (Clarified butter) whole jeera and few onion slicesPour over the akni Garnish with Chopped Green dhania (coriander) Serving suggestion Papar kachoombar achar Dahi or Raito Enjoy 😋
