INGREDIENTS
1 kg leg mutton 1 kg mixed veggies (pumpkin, carrots, potatoes, baby marrow) 1 whole onion 2 large tomatoes Curry leaves (optional)1 ½ cup sour milk
Spices2 tablespoon red masala1 tablespoon crushed garlic2 teaspoon red chilli power 2 teaspoon Jeeru (Cumin) (level) 2 teaspoon Dhana Jeeru (Cumin) ½ teaspoon mixed herbs 2 teaspoon curry powder 2 teaspoon sugar (level)Salt to taste 1 elaichi 2 cinnamon sticks
METHOD
Veggies1. Bring all veggies to boil along with some salt and mixed herbs
Meat1. Slice and braise onions in a pot along with Jeeru (Cumin), elaichi pod, cinnamon sticks and curry leaves.
2. Cut up curry mutton into small portions, add in wet masala, crushed garlic and all your dry spices.
3. Braise out the meat, then add in grated/liquidised tomatoes and sugar.
4. Once the water is semi cooked out of the meat and tomatoes, add in your sour milk (sour milk is optional)
5. Once the meat is cooked and sort of like a curry, add in your boiled veggies and let it cook on low so that the vegetables get all the flavours of the meat.
6. Let most of the water cook out, until desired texture for stew is accomplished
7. Garnish with parsely or dhania (coriander) and enjoy with some rogni naan or bread :)
INFO & TIPS
For the meat, I added it all in the pressure cooker so it’s nice and soft and saves a lot of time.
Don’t over boil the veggies till it’s mash, it should be slightly firm. Drain then let it cook further once you add it to the meat.
