INGREDIENTS
250g baby potatoes (preferably woolies) boil in salted water until soft.
1 punnet mushrooms sliced.
1 small bunch of baby spinach,cut into strips.
1 small tin of creamstyle sweetcorn.
250ml fresh cream,mix a tablespoon of mayonnaise in it.
METHOD
Method.
Fry mushrooms in garlic butter and season with little salt and set aside.
Fry spinach in garlic butter and a bit of salt .
Add boiled potatoes (squish them a bit) to spinach and also add fried mushrooms.
Add a bit more garlic butter and sweetcorn and heat through.
Lastly add freshcream with mayo and simmer on low for a few minutes until a bit thick.
Pour into pyrex dish,sprinkle mozzarella and dried parsley and bake covered at 180 for 15 - 20 minutes
