½ lb (250g) Butter2 eggs1 cup icing sugar2 teaspoon baking powder 1 teaspoon vanilla essence2 ½ to 3 cups flour290 g Rhodes strawberry or apricot jam
Beat butter, icing sugar and eggs till creamy. Then add rest of ingredients and beat. Dough must clean the sides and not stick to the sides of your bowl. If not add little extra flour.

Pat half the dough in a greased 30 cm baking tray.
Mix Jam till smooth and spread over bottom biscuit layer.
Grate remainder of dough over jam.
Bake in a preheated oven at 180 degrees for approximately 20 to 30 minutes or until slightly golden.
Cut into squares while warm. When cool sprinkle icing sugar over.
