INGREDIENTS
500g lamb on Marrow bone, succulent pieces Seasonings salt, freshly ground black pepper, paprika 1 piece cinnamon stick (remove once cooked) 1 teaspoon minced garlic and chilli relisheA piece of freshly grated ginger1 teaspoon chilli powder Pinch tumeric Pinch dhania (coriander) Jeeru (Cumin)1 cup grated carrot 1 cup grated potatoe½ cup red lentils¼ cup boiled brown lentils 1 packet mushrooms soup1 small onions 2 Tables butter ghee (Clarified butter)¼ cup toasted, ground almond nuts Handful tender young I and J green peasBoiling water on hand Chopped fresh parsley
METHOD
Prepare lamb, wash drain in colender. In a saucepan, add butter ghee (Clarified butter), cinnamon stick, fry onions, light brown, add lamb pieces, ginger, garlic relished, seasoning and cook for 15 minutes until meat is tender. Add spices stir and cook further 5 minutes. Add washed red lentils, add boiling water, once it starts getting soft add in brown lentils, followed by grated carrots, potatoes and green peas Stir and close lid and let it cook for next 25 minutes Follow instructions on mushrooms soup and add in let this cook in with the rest of the ingredients. Drizzle grated almond nuts and top with freshly chopped parsley.
The final results be like the lamb meat falling off the marrow bone, veggies cooked soft, not pureed, peas and lentil cooked to rich flavor , aromatic, just need to dish up from the pot, piping hot, dunk in croutons or bread rolls.
