Ingredients: 4 ears sweet corn 1 tin creamstyle sweetcorn 2 tablespoon butter 1 onion (chopped) 1 tablespoon crushed garlic 3 cups water 1 cup milk 2 tablespoon vegetable stock powder 250ml fresh cream 1 green chilli (slit) Salt and pepper (to taste) Coriander (chopped)
Roast corn on electric griller or braai (bbq) till cooked and charred. Cut corn off cob. Heat butter and saute onion until golden. Blend roasted corn with sauted onion and milk till smooth. Season with salt and pepper. Mix water with vegetable stock powder. Add corn mixture and water to pot and simmer until thickened. Add fresh cream, creamstyle corn and chilli and bring to boil. Garnish with coriander.
