Roasted Corn Soup

Ingredients:4 ears sweet corn1 tin creamstyle sweetcorn2 tablespoon butter1 onion (chopped)1 tablespoon ground garlic paste3 cups water1 cup milk2 tablespoon vegetable stock powder (optional for more flavour)250ml fresh cream1 fresh green chilli (slit)Salt and freshly cracked black pepper (to taste)Coriander (chopped)#mamataughtmewellrecipes
METHOD
1. Remove corn leaves, rinse and dry.2. Roast the corn on an electric griller or braai (bbq) (over hot coals) till cooked and charred.3. Cut corn off the cob.4. Heat butter in a pot, and saute onion until golden.5. Blend the roasted corn with sauted onion and milk till smooth. 6. Season with salt and pepper.7. Mix water with vegetable stock powder.8. Add the corn mixture and water to pot and simmer until thickened.9. Add the fresh cream, creamstyle corn and chilli and bring to a boil, simmering together for a few minutes.10.
