INGREDIENTS
6 - 8 slices toasted whole wheat brown bread1 -2 cucumbers2 avocadosLime juice1 tin chickpeas in brine4 tablespoon mayonnaiseFreshly cracked black pepper1 tablespoon crushed garlic¼ teaspoon dried rosemary
Chicken-2 chicken fillets (cubed)1 tablespoon oil½ teaspoon salt½ teaspoon white pepper1 teaspoon dhana jeeroo powder1 teaspoon ground green chillies1 tablespoon ground/crushed garlic
METHOD
1. In a pot heat oil, add spices, chillies and lemon and chicken cubes.2. Cook till just done, remove from heat and cool slightly. 3. Shred chicken, then mix in mayonnaise.4. Roughly crush half of the chickpeas. 5. Add to chicken and mayo mixture and mix in. If you'd like, add crush and add the remainder chickpeas.6. Add garlic, rosemary and black pepper. Mix in.7. Slice avos and drizzle on lime juice.6. Spread a little bit of plain mayonnaise on the toasted bread.7. Arrange on avo slices.8. Spoon and spread chicken and mayo filling.9. Slice cucumber ribbons and place onto filling.10. Spread a little mayonnaise on another toast. 11. Place over the cucumber ribbons, closing sandwich.12. Slice sandwich in half and push a skewer through in each half to hold together and serve.
