INGREDIENTS
1kg chicken fillets or chicken pieces6 tablespoon Mild Mochachos spice (or more)5- 7 tablespoon oil3 tablespoon lemon juice1 tablespoon mayonnaise
METHOD
1. In a pot drizzle in some oil, heat and add 1 teaspoon Mochachos spice, mayonnaise and 1 tablespoon lemon juice. 2. Cook till Just done, white but juicy on the inside.3. When done remove from heat.4. In a saucepan, heat oil with remainder lemon juice and spice to form a marinade.5. Braise lightly till fragrant without burning the marinade.6. Baste the chicken, by spooning/brushing/pouring over.7. Then switch oven to grill setting.8. When ready, place chicken pieces under hot grill to redden.
INFO & TIPS
Note: Do NOT overcook the chicken, it will become dry and stiff.
Using chicken with skin on gives you a closer effect to that of the store.
May use chicken quarters, make into strips or even a whole roast.
