INGREDIENTS
For the potato mixture:1 teaspoon mustard seeds2 tablespoon oil for tempering2 large potatoes boiled and mashed roughly1 teaspoon green chilli pasteSalt to taste1 teaspoon sesame seeds1 teaspoon chilli powder½ teaspoon crushed cumin seeds½ teaspoon tumeric1 tablespoon fresh lemon juiceCoriander & mint chutneyHandful freshly chopped coriander
METHOD
Heat oil in a pot / add the mustard seeds let it crackle then add in the potatoes with the rest of the spices with lemon juice mix and cook till heated through.
Remove from heat and use for the sandwiches.
Butter both sides of the bread slices add coriander chutney on one slice.
Add the potatoes mixture and add red chutney on the other side of bread.
Toast till slightly golden brown serve hot.
If you prefer chilli make sure your chutneys are spread nicely and you can make them spicy
INFO & TIPSThis is a good way to use up any left over mashed potatoes or your regular wara (potato fritters) mixture.
