INGREDIENTS
gajar (carrots) halwa
500g carrots (peeled and washed)½ cup ghee (Clarified butter)2 tablespoon Sojee (semolina flour)2 cups milk1 tin condensed milk1 teaspoon cardamom powder A pinch of orange food colouring ½ cup fresh cream ½ cup milk powder Few strands of saffron
METHOD
Wash and peel carrots add to a food processor and blitz or grate the carrots.In a heavy pot braise ghee (Clarified butter) and Sojee (semolina flour) till slightly pink add the carrots and cook for 5-10 minutes then add the milk and condensed milk stir constantly on medium to low heat,add a pinch of orange food colouring mix well cover and cook until the mixture evaporates.Keep mixing the halwa to prevent it from scorching lastly add the fresh cream,saffron,cardamom powder and milk powder cook until ghee (Clarified butter) separates from mixture and starts leaving the sides of the pot garnish with almonds and pistachios.
