INGREDIENTS
1 Cup ghee (Clarified butter) 1kg Dudhi Grated 6 elaichi pods½ cup Klim Powder¾ cup Sugar+- 2 ½ litres of Milk Your choice of Nuts choppedGreen food colouring
METHOD
1. First start by making Paneer/Mawa with 1 litre of Milk, add few tblpsn Lemon Juice & let it curdle.Rinse it with water till the sourness is out, Wrap it tight with a muslin cloth & put a heavy object ontop for the leftover water to release and for it to set.
2. Take ½ cup Klim add 4-5 tablespoon of Milk gradually and keep on mixing with your hand till it becomes like breadcrumb texture, Then add to a Grinder to make the balls little fine similar process for burfee
3. Braise the elaichi in ¾ cup ghee (Clarified butter), add in the Dudhi, Braise for 15-20 minutes without milk.
4. Add 1.2 Ltrs of Milk
5 . Once Milk almost burnt out add ¾ cup sugar (more/less according to your liking). At this stage can add in some green colouring
6. When mixture almost dry add in your Klim Mixture, & crumble your homemade Paneer/mawa and add in half of the paneer but if you like it more rich add in all.
7. Lastly roast your nuts in ¼ cup ghee (Clarified butter) then add to the doodhi, and let it cook for another 5 10 minutes for the ghee (Clarified butter) to soak in. Enjoy!!Patience is the key!
